When walking into a specialty cafe or beginning your journey as a barista, few drinks carry as much intrigue, or misunderstanding, as espresso. It is dark, intense, and serves as the foundation for nearly every popular coffee beverage on the menu.
In our Barista NC II program at Kaluppâ Foundation, generously funded by TESDA, understanding espresso is about learning a recipe and mastering the science of extraction. Right inside our barista practical classroom, our scholars get hands-on experience dialing in shots, mastering machine mechanics, and evaluating flavor profiles. But before ever touching an espresso machine or grinder, every aspiring barista must first understand what espresso actually is, what defines its quality, and how to evaluate the perfect shot.
What Is Espresso? (Demystifying the Basics)
To truly understand espresso, we first need to clear up two common myths:
Espresso is NOT a specific type of bean. You can make espresso with Arabica, Robusta, or single-origin specialty beans from any corner of the world.
Espresso is NOT a roast level. While traditional Italian espresso often uses dark roasts, modern specialty espresso ranges from light to medium roasts depending on the desired flavor profile.
Definition: Espresso is a concentrated coffee brewing method where hot water (90°C-96°C) is forced through finely ground, compressed coffee under high pressure (≈9 bars) in a short amount of time (20 to 30 seconds).
Because of this intense pressure, espresso extracts soluble solids, aromatic oils, and gases much faster than filter or drip methods, resulting in a thick, velvety beverage.
The Heart of the Café Menu: Espresso-Based Drinks
While espresso is fantastic on its own, its high intensity and thick body make it the ideal base ingredient for the most beloved coffee drinks across the globe. When combined with textured milk or water, espresso creates a wide variety of menu classics:
Latte: One or two shots of espresso topped with a generous amount of steamed milk and a thin layer of microfoam (≈1cm). Smooth, creamy, and approachable.
Cappuccino: Traditionally an equal balance of espresso, steamed milk, and a luxurious, dense layer of foamed milk. It offers a richer, coffee-forward taste compared to a latte.
Americano: Hot water diluted with espresso shots. It retains the complex flavor notes of espresso in a volume and strength similar to traditional drip coffee.
Flat White: Originating from Australia and New Zealand, this drink combines espresso with velvety, tightly textured microfoam with almost no stiff foam layer, letting the espresso cut straight through the creaminess.
Macchiato: Macchiato means "marked" in Italian. A traditional espresso macchiato is simply a shot of espresso "marked" with a dollop of warm milk foam on top.
Café Latte: A rich shot of espresso blended with silky steamed milk and finished with pouring artistry.

The Golden Parameters (The NC II Calibration Standard)
In the TESDA Barista NC II core curriculum, achieving coffee excellence requires hitting precise technical markers during dose and extraction:
Dose (Coffee In): 14g to 18g of finely ground coffee loaded into a standard double-shot filter basket.
Yield (Liquid Out): 50mL to 70mL total liquid volume (or ≈36g-40g liquid weight).
Thermal Target: Maintained between 90°C and 96°C for clean solubles extraction.
Extraction Duration: 20 to 30 seconds from the instant the water pump engages.
Anatomy of a Shot
When pulled into a clear glass demitasse, a well-extracted double shot reveals three distinct, beautiful layers:
The Heart (Base): Deep dark brown at the bottom, packed with heavy soluble solids, natural caramelization, and deep coffee notes.
The Body (Middle): Rich caramel-toned layer where balanced sweetness and clarity reside.
The Crema (Top): Golden-reddish foam made of emulsified coffee oils and carbon dioxide gas bubbles, the trademark sign of fresh, high-pressure extraction.
Sensory Evaluation: Dialing In
Mastering extraction speed and grind size is essential to finding the flavor sweet spot:
Under-Extracted (Coarse Grind / Fast Flow): The water shoots through too quickly (<20 seconds). The shot tastes sour, thin, salty, and lacks sweet body.
Over-Extracted (Fine Grind / Slow Flow): The water struggles to choke through (>30 seconds). The shot extracts bitter, harsh compounds, leaving a dry or burnt finish.
Balanced Extraction: Flow rate stays steady like warm honey. The shot delivers a vibrant balance of sweetness, delicate acidity, and a long, rich finish.
Closing the Loop: The Sustainability Connection 🌱
At Kaluppâ Foundation, coffee doesn't end once the espresso shot is pulled. True to our advocacy for sustainable practices and environmental protection, nothing goes to waste:
The Vermicomposting Loop: Spent coffee grounds (SCGs) left over after espresso extraction are rich in nitrogen and organic matter. Instead of ending up in landfills, our spent coffee pucks are collected and fed to our African Night Crawlers in our farm's vermicomposting facility. The worms break down the grounds to create nutrient-dense vermicast, which in turn nourishes the soil and crops across our integrated farm!
It is coffee culture full circle, from farm, to cup, back to the earth.
